Shrimp "Ceviche"


½ cup onion – chopped
½ cup fresh lime juice
1 lb medium cooked shrimp
1 cup cucumber – peeled and seeded, chopped
½ cup ketchup
1/3 cup cilantro – chopped
1 ½ tbs hot sauce (more or less to taste)
1 tbs olive oil
¼ tsp salt

1.     Place chopped onion in a colander.  Rinse with cold water and drain.
2.     Combine all ingredients and chill.  Ceviche is best if it’s allowed to sit for at least an hour.
3.     Serve with tortilla chips.
